Best breakfast potatoes, any time of day. And it compliments any meal. This little side dish will add much flavor to your palate and many groans of enjoyment.
Potatoes are a staple in the American food industry and within our own households. Some might even say that they are iconic to our culture. Baked potatoes during picnics, mashed potatoes during dinner, and even hash browns with breakfast. Well here is a dish that is another spin on the classic starch. Just the right crunchy on the outside with the just the right soft on the inside. This tasty side will have the family begging for more. And it goes great with any main dish… Steak, Chicken, Pork, even fish or seafood platters.
Most home gardeners grow some variety of these little beauties because they are so easy to grow. And they grow in abundance. So why not come up with various ways to prepare and eat them. It only makes sense. Who would want to eat the same thing every day and night. Not us, we like variety. That’s why we are always trying something new and different.
One of the best parts of this is the potato prep work can be done at your convenience. After chopping up the potatoes, they can be submerged in water and kept in the fridge for up to 24 hours or placed in the freezer till you are ready to use. Making the prep work for those really busy nights even easier.
WHAT YOU NEED:

- Potatoes.
- Fresh Chives.
- Cheddar Cheese (optional).
- Bacon bits / pieces (optional).

Want a different flavor, switch up the spices, go daring and heat them up with some cayenne pepper. Any way you choose, this dish will add to your flavor pallet and round out the main course.
INGREDIENTS:

- (1 bag) Potatoes.
- Fresh Chives (finely chopped).
- Butter (Salted or unsalted)
- Garlic powder.
- Onion powder.
- Oregano.
- salt.
- pepper.

PREP:
Chop the potatoes into 1 inch pieces. Rinse well with cold water. Chop the Chives, place in a bowl and set the bowl aside to be used later.
COMBINING:
Place potato pieces in a large bowl. Add, Garlic powder, Onion powder, Oregano, salt, and pepper. Mix together well so that all the potatoes are covered with the spices.
COOKING:
On medium high heat melt butter (salted or unsalted) into large frying pan. Pour seasoned potato chunks into buttered pan. Stir frequently as they cook. Continue cooking , adding spices if necessary, until the potatoes are a golden brown on the outside. Plate the potatoes with your main meal. As an option, you can add more texture and flavor by adding shredded cheddar cheese and bacon bits on top . And now top it with some of the chopped chives. Serve it nice and hot.
ENJOYING:
For yet another flavorful addition, you can top with sour cream before adding the chives. No matter which way you choose to top it, this side dish will compliment any meal and your family will love it.
